1 can (15 oz?) chili con carne, no beans (any brand)
1 jar (16 oz?) Cheeze Whiz
1 small can diced mild green chilis, drained
16 oz grated sharp cheddar cheese
Mix all ingredients and place in a round casserole. Bake for ~30 min at
350 degrees until hot. Serve with tortilla chips.

1 bag washed Spinach Greens, dressed with Panera brand Fuji Apple Dressing
then top with:
1 Fiji Apple, cored and cut in cubes
Handful of dried cranberries
Handful of toasted almonds
Sprinkle of Feta Cheese

1-2 TBSP oil (to use when cooking spaghetti, and/or to oil the pan)
8 oz package of spaghetti or any pasta noodles, cooked to instructions and
drained
1 15 oz jar spaghetti sauce
1 12 oz package Trader Joe's Sweet Italian Style Chicken Sausage, or any
other meat
Sautéed veggies of choice (onion, peppers, zucchini, etc)
1 LB mozzarella cheese or other cheese of choice
1 16 oz container of cottage cheese mixed with 1-2 beaten eggs
Season to taste
Parmesan Cheese
Grease the pan with a cooking spray or TBSP of oil. Put a thin layer of
spaghetti sauce on the bottom or the pan to make serving easier. Then
layer the ingredients:
1/2 the noodles
1/2 the meat
1/2 the veggies
1/2 the cottage cheese/egg mixture
1/2 the mozzarella or cheese of choice
1/2 the remaining spaghetti sauce.
Add the second layer in the same order as above ending with spaghetti
sauce.
Top with a sprinkle of parmesan cheese if desired.
Cover with aluminum foil and bake at 350 degrees for 45 min or until
thoroughly heated.

Cake
4 extra large eggs
1 cup oil
2 cup sugar
1 can (1 lb) pumpkin
2 cups unsifted flour
2 tsp baking powder
1 tsp soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp nutmeg
Frosting
3 oz cream cheese, softened
6 Tbsp. butter, softened
1 Tbsp milk (or a little less)
1 tsp vanilla
1 3/4 cups powdered sugar, sifted after measuring.
Cake:
Mix eggs, oil and sugar with a mixer on med speed until blended. Add
pumpkin and mix thoroughly. In a separate bowl, sift together the dry
ingredients. Gradually add the dry ingredients to the wet and mix until
smooth. Pour into a greased and floured 10 inch X 15 inch Jelly roll pan.
(I bought mine at Home Goods for under $10). Bake on center shelf at 375
degrees until toothpick in center comes out clean. Approx 20-25 min. Be
sure the center is cooked or it will fall. Cool cake completely before
frosting.
Frosting:
Beat cream cheese until very soft. Add butter and beat until smooth.
Beat in milk and vanilla. Gradually add the sifted powdered sugar. Beat
until smooth. Remember, be sure the cake is cool before you frost it!
Once frosted, store cake in fridge until served. Can be frozen
too.
